I present to you one of my favorite breakfast hacks. Not only is this Avocado Toast with Eggs ready in no time, but the warm bread, with the avocado, and egg drizzled with hot sauce makes for a delicious combo! This is my go-to when I want to treat myself, eat healthy, and do so with minimal cooking and cleanup! For the poached egg, I use this super nifty tool from Amazon. I probably use this about 3 times per week and I highly recommend it! Here is my review on the egg poacher if you are interested.

Ingredients

    • 1 English Muffin (I love Ezekiel English Muffins or Thomas Multi-grain Light)
    • 1/4 avocado
    • 2 eggs
    • salt, to taste
    • pepper, to taste
    • hot sauce (optional) – I really like  Cholula Chipotle Sauce

Instructions

Step 1

Slice the English Muffin in half and toast the muffin halves. My hack is to stick the english muffin in the microwave for 30 seconds and slice in half once it is heated.

Step 2

Divide 1/4 of the avocado between the two halves. Using a fork, mash the avocado on top of the halves. Add a dash of salt and pepper.

Step 3

Place the eggs in the egg poacher and stick in the microwave for 52 seconds. If you don’t have these super nifty egg poachers, you can fry an egg on a skillet or poach an egg using boiling water. Place the cooked egg on top of the muffin halves with avocado. Drizzle some hot sauce on top (I prefer cholula) and voila!
