These low-carb poke bowls only take 5 minutes to put together and are my go-to option when I am looking for a quick, yet delicious lunch. My mom loves poke bowls but tries to stick to a low-carb diet. As a result, instead of rice, I use a mix of cauliflower and shaved brussels that is super tasty and meets that low-carb goal. As far as the toppings go, I’ve listed some of my favorites below. However, you can get creative and add any additional toppings that you like (e.g. carrots, jicama, siracha, etc).

Ingredients

  • 1 cup cauliflower “rice” (you can find it at most stores but, if not, you can get a regular cauliflower and put it in your food processor)
  • 1 cup shaved brussels sprouts (if you cannot find it at the store simply slice brussels sprouts)
  • 1 tbsp water
  • 1/4 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 4 oz smoked salmon
  • 1/2 cucumber, peeled and cut into small pieces
  • 1/4 avocado
  • 1 tbsp apple cider vinegar
  • 1/2 tbsp low sodium soy sauce
  • seaweed/nori sheet (optional), cut into small rectangles

Instructions

Step 1

Heat a non-stick skillet over medium heat. Add the cauliflower, brussels, salt, pepper, garlic powder and water. Stir  until cooked through (approximately 3-5 minutes). Add water as needed.

Step 2

Once the  cauliflower-brussels mix is ready, remove from the heat and place in a bowl. Add the apple cider vinegar and mix through. Top with the sliced cucumber, avocado, nori sheet, and smoked salmon.  Add the soy sauce and you are good to go!
