If you want to start your day with pure joy, then you have to try this 90-Second Banana Bread Mug Cake! It is ridiculously easy to make and only takes 1 minute to prep and 90 seconds to cook in the microwave. I top mine with almond butter and cinnamon, the result is a spongy, decadent treat that satisfies my sweet tooth for baked goods. What is amazing is that it is still super healthy and a great way to portion control. This was inspired by one of my favorite bloggers, Skinnytaste.
Ingredients
- 1 /2 banana (very ripe!)
- 2 tbsp all purpose flour or gluten free flour
- 1/4 tsp baking powder
- pinch of salt
- 1/4 tsp vanilla extract

Instructions
Step 1
Using a fork, mash the banana on a flat surface.
Step 2
Grab a mug and add the flour, baking powder, and salt and mix thoroughly. Add the mashed banana and vanilla and combine all of the ingredients (I recommend using a small spatula to mix the wet and dry ingredients).
Step 3
Place the mug in the microwave and cook for 90 seconds. I love eating with almond butter and cinnamon on top. However, you can also top with walnuts, chocolate chips, peanut butter or anything else you are craving.
