Cold, gloomy days call for a bowl of warm soup. This creamy cauliflower soup is a staple in my house. With only 3 ingredients, you will be able to whip up a delicious, hearty bowl that has an ever so creamy consistency (and it is dairy-free). It is also a great way to get your veggie fix in for a meal!
Ingredients
- 1 cauliflower head, cut into large chunks
- 1 onion, diced
- 3 cups low sodium vegetable broth
- 1 cup water
- 1 teaspoon salt
- ground pepper to taste

Instructions
Step 1
Cut the cauliflower and onion and place in a pot. Add the broth, water, and salt and bring to a boil over high heat. Reduce the heat to medium-low, cover the pot, and simmer for approximately 12 minutes.
Step 2
Pour the contents of the pot into a blender (or if you have an immersion blender this is also a great option). Blend until smooth. Add more water if needed. Voila, you are done! Garnish with ground black pepper if desired and enjoy!
