I used to love eating picadillo as a kid, so this is my equivalent of comfort food. That said, this recipe is so delicious and healthy that I make it on a weekly basis. With lean bison, hearty veggies, and less than 5 minute prep time, this instant pot recipe is a mouth-watering combination of flavors that is ready in no-time! This is another recipe from, skinnytaste, one of my favorite bloggers. I have yet to make this dish for someone without them asking for seconds! 

Ingredients

  • 1 lb ground bison (you can substitute with 93% lean ground beef or turkey)
  • 1/2 large onion, diced
  • 2 cloves garlic, minced
  • 1 tomato, diced
  • 1/2 red bell pepper, finely chopped
  • 4 oz tomato sauce
  • 2 tbsp green or kalamata olives (include the brine)
  • 2 tbsp cilantro
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 bay leaf
  • ground pepper to taste
  • 3 tbsp water

Instructions

Step 1

Using the Instant Pot, press the saute button. Add the meat, season with salt and pepper and break the meat into small pieces until it is no longer pink.

Step 2

Add the onion, bell pepper, garlic, tomato, cilantro, and stir 1 minute. Add the olives along with the brine from the juice, cumin, and a bay leaf. Lastly add the tomato sauce with 3 tablespoons of water and mix well. Cover the instant pot and cook on the high pressure setting for 15 minutes. You can then do either a natural or quick release. Feel free to serve with a side of rice and enjoy!
