There is no reason why doing a healthy reset can’t be delicious. This Whole30 scallop “pasta” is one of my absolute favorite recipes. The combination of scallops with tomatoes, arugula, lemon, and zucchini is unreal. Plus, it is also Low Carb and Keto friendly and takes less than 15 minutes to put  together. This is my go-to meal when I am looking to treat myself and it is also an excellent option for date night!

Ingredients

Scallops

  • 4oz sea scallops
  • 1/2 tsp olive oil
  • 1/8 tsp salt
  • 1/8 tsp pepper

“Pasta”

  • 1 tsp olive oil
  • 1 garlic clove, minced
  • 1/8 tsp crushed red pepper flakes
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp garlic powder
  • 2 cups zucchini noodles
  • 8 cherry tomatoes, halved
  • 1 cup arugula
  • 1/4 cup diced tomatoes
  • 1/2 lemon, juiced

Instructions

Step 1

Season the scallops with salt and pepper. Add the olive oil (1/2 tsp) to a skillet on high heat. Once the oil heats up, add the scallops and sear for approximately 2 minutes per side. Remove from heat and set aside.

Step 2

Using the same skillet add the remaining olive oil (1 tsp) over medium to high heat. Add the minced garlic and red pepper and cook for about 30 seconds or until fragrant. Add the cherry tomatoes, crushed tomatoes, arugula, lemon juice and zucchini noodles. Sprinkle with salt, pepper and garlic powder and cook for approximately 3 minutes or until the zucchini is cooked through. Add a little water if the sauce appears too thick.

Step 3

Once the vegetable “pasta” is cooked through, add the scallops to the mix and toss gently to combine. Serve on  a plate and enjoy!
