These 5 Ingredient Sweet Potato Waffles are the perfect way to start your morning. Packed with protein, fluffy on the outside, and sweet on the inside, these waffles are great served with almond butter or maple syrup. The trick is making sure you bake the sweet potato ahead of time (I simply stick the sweet potato in the oven for 40 minutes at 400 F). To make the waffles, I use the most adorable mini-waffle maker. I find that it is super quick and easy to use and a great way to maintain portion control. If you want more info on the waffle maker, visit my review here. Heads up you can use a regular pan if you don’t have the waffle maker.

Ingredients

  • 1  sweet potato, baked and peeled (about 1 cup)
  • 4 eggs
  • 1/4 tsp salt
  • 1/8 tsp cinnamon
  • 1/4 tsp nutmeg
  • Olive oil spray (optional)

Instructions

Step 1

Place all of the ingredients in a high-speed blender. Blend until smooth.

Step 2

Turn on the mini waffle maker. Spray a bit of olive oil on the top and bottom of the waffle maker. If you don’t have a waffle maker, simply heat a non-stick pan over medium heat and add spray with some olive oil. Add 1/4 cup of batter and let cook for 1 minute and 30 seconds. Remove the waffle and repeat with the remaining batter. The recipe should make a total of 10 waffles, 5 waffles per person. Enjoy!
