These gluten-free almond cookies are truly too-good-to be true! Not only do they taste amazing, but they are super easy to make, and are only 32 calories a cookie. The cherry on top is that they happen to be gluten-free, sugar-free, keto, and low carb. All you need is four ingredients and you will have your house smelling like warm, soft, gooey cookies in no time. Seriously, there is no better way to enjoy the holidays than with this guilt-free dessert. This was inspired by one of my favorite bloggers, Skinnytaste.

Ingredients

    • 1 egg
    • 1 cup almond butter
    • 6 tbsp natural granulated sweetner (I use Swerve)
    • 1 tbsp sugar-free maple syrup (I use Lakanto)
    • cooking spray

    Step 1

    Preheat the oven to 350℉. Place aluminum foil over some baking sheets and spray lightly with cooking spray. 

    Step 2

    In a bowl, whisk the egg. Add the cup of almond butter with the 6 tbsp of sugar, the 1 tablespoon of maple syrup and mix. 

    Step 3

    Divide the mix into 24 mounds of a similar size (approximately 1 tbsp per mound).  Place the mounds onto the baking sheets and flatten. Keep in mind they will be pretty sticky. 

    Step 4

    Place the baking sheets in the oven and bake for 12 minutes.  You will know the cookies are ready when the cookies start to get golden around the edges. Let the cookies cool before removing from the cookie sheet. Enjoy!
