Fall means it is Apple picking season! There is nothing that I miss more from my orchard visits than warming up with a cup of hot apple cider and a cinnamon sugar donut. After testing many recipes, I have come up with a sugar-free, oil-free, dairy-free and an overall guilt-free version of these donuts. Guaranteed to warm up your morning and bring a smile to your face with every bite.

Ingredients

Donut

  • 1 cup oat flour
  • 1/4 tsp salt
  • 1 1/4 tsp baking powder
  • 1 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 1/2 tsp stevia or xylitol
  • 1/2 cup unsweetened apple sauce (if you can’t find unsweetened apple sauce see below for instructions on how to make it,  you will need 1 apple)
  • 3 tbsp egg whites
  • 1 tsp apple cider vinegar
  • 1 tsp vanilla extract
  • 1/3 cup unsweetened almond milk
  • cooking spray

Topping

  • 1 tbsp apple sauce
  • 1 1/2 tsp stevia or xylitol
  • 1/2 tsp cinnamon

Apple Sauce (if you need to make it and couldn’t find some at the store)

  • 1 apple
  • 1/4 cup water
  • 1/8 tsp cinnamon (optional)

Instructions

Step 1

Preheat the oven to 350°F, spray the donut pan with cooking spray and set aside. I found these adorable mini donut pans on amazon that I highly recommend!

Step 2

If you were able to buy unsweetened applesauce, skip to step 3. To make the applesauce, slice the apples into small pieces. No need to peel them unless you want to, the skin is a great source of fiber! Place the sliced apples, water and cinnamon in a pot and set over medium heat. Cover and cook for 15-20 minutes until tender. Using a blender or potato masher “pure” the apples.

Step 3

Mix the dry ingredients first and then add in the wet ingredients. Mix everything together (I use a handheld blender). Divide the mix into 6 donuts in your pan and bake in the oven for approximately 13 minutes. Remove the donuts from the oven and let cool for 10 minutes.

Step 4

Mix together the stevia and cinnamon for the topping and place this mix on a flat plate. Brush the top of each donut with a tiny bit of apple sauce (we are doing this so that the sugar and cinnamon will stick). Sprinkle the stevia/cinnamon mix on top of the donut until it is evenly coated. Heads up you can also top these off with a bit of almond butter instead of  the stevia/cinnamon mix and it is also a delicious combination. Hope you enjoy!
