Looking for a quick and easy lunch option that takes less than 5 minutes to put together? Sharing my take on the classic Chicken Waldorf Salad. The sweet and savory combination of rotisserie chicken, grapes, and walnuts makes this one of my favorite go-to lunch recipes. Most Waldorf salads are loaded with Mayo and added sugars. Instead, I use grapes and Greek Yogurt to make this a healthier protein-packed version which tastes just as good as the original!
Ingredients
- 4oz cooked rotisserie chicken, shredded
- 1 /2 cup celery, chopped
- 2 cups romaine lettuce, chopped
- 1 cup grapes, halved
- 2 oz fat-free greek yogurt (I use Fage 0%)
- 1/2 lemon, juiced
- 1/8 tsp salt
- pepper to taste
- 1 packet of stevia (about 1/4 tsp)
- 1 tbsp walnuts, chopped

Instructions
Step 1
In a medium bowl add the grapes, celery, lettuce, chicken, and Greek Yogurt. Squeeze half a lemon, sprinkle with the stevia and mix thoroughly. Top with walnuts and enjoy!
