This easy homemade muesli is such a fun and tasty way to add some crunch to any meal or snack. I make this muesli at least once a week and love adding it to my breakfast bowls or yogurt. I started making my own muesli because I found store bought brands were loaded with added sugars. This muesli only takes about 15 minutes to make and is such a delicious way to add some healthy carbs and fats into your diet.
Ingredients
- 3 packets (120g) Plain Instant Oatmeal
- 1/2 tsp salt
- 1 tsp cinnamon
- 28g almonds
- 28g pumpkin seeds
- 28g chopped pecans
- 10g shredded coconut
- 14g dried figs, cut into small squares
- 25g dried apricots, cut into small squares

Instructions
Step 1
Preheat the oven to 350℉. Arrange two baking sheets with parchment paper on top.
Step 2
Add the oats, salt, and cinnamon inside a bowl. Mix thoroughly and place on top of a baking sheet. Place the almonds, pecans, and pumpkin seeds on the other baking sheet and toss to combine. Put both baking sheets inside the oven and bake until the nuts are fragrant, approximately 10 minutes.
Step 3
Remove the baking sheet with the nuts and set aside to cool. Sprinkle the shredded coconut over the oat mix and return the baking sheet to the oven until the coconut is golden brown, for approximately 5 minutes. Remove the baking sheet and let cool for 5 minutes.
Step 4
Mix all the ingredients (oat mix with coconut + roasted nuts + figs + apricots) in a bowl, pour into a swanky container, and voila, you are done!
