At half the calories of regular pizza, this easy sausage and goat cheese pizza is a mouth watering combo that is the perfect solution for staying in and watching movies. The ingredients are super simple, the taste is fantastic, and it is super easy to make. I use Greek yogurt for the crust, which makes this a much healthier alternative and adds some protein to the base. It is also loaded with grilled veggies, which, combined with the sausage and goat cheese, results in an irresistible taste that will have your family lining up for more!

Ingredients

Crust

  • 1 cup all purpose or whole wheat flour (plus a bit more for dusting)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup non-fat greek yogurt
  • olive oil spray
  • optional add ons: garlic powder, onion power, salt

Toppings

  • 1/2 zucchini, diced
  • 1/2 red bell pepper, diced
  • 1/2 onion, diced
  • 1/2 cup mushrooms, diced
  • 1 link (85 gr) Italian Spicy Chicken Sausage
  • 1/4 cup of water
  • 1/8 teaspoon salt
  • 1/8 teaspoon garlic powder
  • pepper, to taste
  • 2 tablespoons marinara sauce
  • 2 oz goat cheese, crumbled

Instructions

Step 1

Preheat the oven at 450℉.  Cover a round pizza pan or sheet pan with aluminum foil and spray lightly with oil.

Step 2

Heat a skillet over medium to high heat and add the zucchini, red bell pepper, onion, garlic powder, salt and pepper. Add 2 tbsp of water to the mix and stir the veggies occasionally as they cook for about 10 minutes. 

 

Step 3

As the veggies are cooking, grab a medium bowl combine the flour, baking powder, salt and mix. Add in the yogurt and use a fork to mix until it is well combined.

 

Step 4

Lightly dust flour on a flat surface. Remove the dough from the bowl and knead a few times until you form a round ball. Using a rolling pin with a little flour, roll the dough out into a large thin circle (about 3/4 inch thick with a 11 inch diameter).  Lay the dough out on the oiled covered pan. Spray the dough lightly with some olive oil and sprinkle with a bit of garlic powder, onion powder, and salt. Flip over and do the same on the other side. Place the dough in the oven for 8 minutes.

Step 5

While the crust is cooking, add the mushroom and sausage to the veggie mix along with another 2 tbsp of water. Mix in all the ingredients and allow to cook for another 5 minutes. Feel free to add a bit more salt and pepper if needed.

Step 6

Remove the crust from the oven and flip over (we are doing this so the crust cooks evenly). Spread the marinara sauce over the crust. Add the grilled veggies and sausage mix and spread evenly over the crust. Sprinkle the goat cheese on top and bake for another 6 minutes or until the crust is cooked through. 

Step 7

Remove the pizza from the oven and transfer to a cutting board. Slice the pizza into 8 pieces and enjoy!
