One of my favorite family traditions is that we all get together for brunch on Sundays. And when I say all, I mean all – grandparents, aunts, siblings, you name it! Both my grandma and sister-in-law have a bit of a sweet tooth, so I was in the hunt for a something that could hit the spot. This finding from Skinnytaste (one of my favorite blogs) is pure gold! Not only is the cinnamon roll so good, but you could eat about 4 of these to match the calories of store bought roll. 100% taste, zero guilt on this one!

Ingredients

Roll

  • 1  1/8 teaspoon active dry yeast 
  • 1/4 cup warm water
  • 2 teaspoons xylitol or monkfruit sweetneer
  •  2 tablespoons unsweetened almond milk
  • 1 egg
  • 1/4 teaspoon salt
  • 1 1/2 cups all purpose flour
  • 2 teaspoons unsalted butter, melted
  • Cooking spray
  • 3 tablespoons brown sugar
  • 1  1/2 teaspoons ground cinnamon

Glaze

  • 1/4 cup light cream (at room temperature)
  • 1/4 teaspoon vanilla
  • 1 pinch of salt
  • 1/4 cup monkfruit sweetner
  • unsweetened almond milk (as needed)

Instructions

Step 1

In a small bow, dissolve the yeast in the warm water and set aside for 5 minutes.

Step 2

In a bowl, mix the xylitol, milk, egg, salt, yeast mixture and flour.  Turn the dough onto a lightly floured surface and use your hands to gently knead the mix until the ingredients are mixed together and the dough is smooth and elastic. Roll the dough into a ball (the dough will be sticky so I recommend using flour on your hands to help).

Melt 1/2 teaspon of butter. Turn the dough in the melted butter until it is greased all over. Cover with a damp towel and let it rest for about an hour until the dough rises.

Step 3

In a bowl, mix the brown sugar with the cinamon.

Coat a 7 inch round cake pan with cooking spray and set aside. You can also use individual ramekins like I did so that it is easier to place inside the airfryer.

Step 4

Punch down on the dough. On a lightly floured surface, use a rolling pin to roll into a 7 x 13 inch rectangle that is 1/4 inch thick. Use the remaining melted butter to brush over the dough. Sprinkle on the brown sugar/cinnamon mix on top. Cut into 7 strips that are 1 inch wide (see the picture for reference). Roll up each strip tightly.

Place the rolls in the prepared pan, spiral side up. Cover with a damp towel and set aside until the rolls have increased in size (approx. 20-40 minutes).

Step 5

Place the pan in the air fryer basket. Bake for 20 minutes at a temperature of 270 °F. Let cool for 5 minutes while you prepare the glaze.

In a small bowl, whisk together the cream cheese, vanilla and salt until completely smooth. Whisk in the monkfruit sweetener until fully blended. Add in the almond milk 1 teaspoon at a time, until the mixture reaches a pourable, but thick consistency.

Spread the glaze evenly over the cinnamon rolls and enjoy!
