These donuts are freaking delicious! I have the biggest sweet-tooth and am a sucker for the combination of peanut butter and chocolate. I recently came across this donut recipe and it is such a happy find. Not only are these donuts super tasty and easy to make, but they do not require eggs, dairy nor sugar and are only 75 calories (52 without the peanut butter icing) per donut. I use the following donut mold that I bought on Amazon. It is super practical and works like a charm.

Ingredients

    • 1/2 cup all purpose flour
    • 3 tbsp cocoa powder
    • 1 1/2 tsp baking powder
    • 1/4 tsp salt
    • 3 tbsp natural granulated sweetner (I use Swerve)
    • 1/2 cup almond milk
    • 1/4 cup pumpkin puree
    • 1 tsp natural powdered sugar (I use Swerve)
    • 2 tbsp peanut butter
    • 5 peanuts, crushed

Instructions

Step 1

Preheat the oven to 390℉. In a bowl, mix the 1/2 cup of flour with the 3 tbsp of cocoa powder, the 1/4 tsp of salt, the 1 and 1/2 tsp of baking powder and the 3 tbsp of granulated sugar.

Step 2

In a separate bowl, mix the 1/2 cup of almond milk with the 1/4 cup of pumpkin puree and the 1 tsp of powdered sweetener.  Pour this mix onto the dry ingredients and mix until smooth.

Step 3

Spray the donut mold with a bit of olive oil. Evenly distribute the batter amongst the donut molds. Place the mold in the oven and bake for approximately 12 minutes.

 

Step 4

Let the donuts cool and then top with 1 tsp of peanut butter per donut. Sprinkle the donuts with the crushed peanuts and enjoy!
