This Lemon Turkey bowl is my go-to lunch option when I am looking for something super quick, yet delicious. This dish takes less than 10 minutes to make and the warm combination of hummus and lemon is so tasty and filling!
Ingredients
- 2 cups spiralized zucchini
- 4 oz ground turkey
- 2 tbsp hummus
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/2 tsp garlic powder
- 1/2 lemon juiced

Instructions
Step 1
In a large skillet, add the ground turkey. Season with 1/8 tsp of salt, 1/8 tsp of pepper, 1/4 tsp garlic powder, and stir until cooked through (approximately 4 minutes). Once the turkey is cooked, remove from the skillet and set aside.
Step 2
Add the zucchini noodles to the skillet and cook over medium-high heat. Season the noodles with 1/8 tsp of salt, 1/8 tsp pepper, 1/4 tsp garlic powder. I like to add a bit of water (2 tbsp) to the skillet to help the noodles cook.
Step 3
Once the noodles are cooked, add the hummus, the cooked turkey, and the juice from half a lemon. Stir and continue cooking until the entire dish is hot and well mixed (approximately 2 minutes). Serve in a plate or a bowl and enjoy!
