With quarantine, I started to go on evening walks after dinner as a way to to force myself to unwind, switch out of work-mode, and get some fresh air. These walks are now one of the highlights of my day and I usually bring one of these popsicles as a way to treat myself and keep cool in the summer heat. Inspired by one of my favorite bloggers, chocolatecoveredkatie, this mix of pineapple and lemon results in a delicious twist of flavors that will have you feeling like you are relaxing on a beach somewhere!

Ingredients

  • 4 cups pineapple
  • 1 1/2 cup unsweetened almond milk
  • 1 1/4 tsp salt
  • 1/2 lemon (squeeze the juice from half a lemon)
  • 1 tsp stevia (optional, pineapple may already be pretty sweet)

Instructions

Step 1

Place all the ingredients in a blender and blend until smooth. Pour the content into a popsicle mold. Insert the sticks and freeze for 3 hours. I found this awesome silicone mold that I highly recommend! It even comes with cute little bags to transport the popsicles.

Step 2

Remove the popsicle from the mold and enjoy!
