Elevate your taco experience with this recipe. I freaking love scallops and this combination of flavors is so delicious! This lunch time recipe takes less than 15 minutes to make, has a super healthy mix of ingredients, and the end result is finger-licking good! I probably make this for lunch at least twice a week and like to serve the tacos with a side of grilled veggies. I’ve included the instructions for the veggies below, but feel free to serve with anything else that sounds tasty.
Ingredients
Tacos
- 4oz sea scallops
- 1/2 tsp butter or olive oil
- 1/8 tsp salt
- 1/8 tsp pepper
- 2 corn tortillas
Guacamole
- 1/4 avocado
- 5 cherry tomatoes, diced (or 1/4 cup tomato, diced)
- 1 tbsp red onion, diced
- 1/2 lime, juiced
- 1 tsp cilantro, chopped
- 1/4 tsp salt
- pepper, to taste
Grilled Veggies
- 1/8 red bell pepper, diced
- 1/2 cup zucchini, diced
- 1/2 cup spinach
- 1/2 cup mushroom, diced
- 1/4 red onion, in thin slices
- 1/4 tsp basil, chopped
- 1/4 tsp coconut aminos
- 1/4 cup vegetable broth or water
- 1/8 tsp salt
- 1/4 tsp dried marjoram

Instructions
Step 1
Season the scallops with salt and pepper. Add the butter or oil to a skillet on high heat. Once the butter/oil begins to smoke, add the scallops and sear for approximately 2 minutes per side. Remove from heat and set aside.
Step 2
Using a different skillet, add all of the vegetables to make the grilled veggies. Add the broth, aminos, salt and herbs and sauté over medium-high heat for about 10 minutes until the peppers are tender.
Step 3
While the veggies are cooking, prepare the guacamole by first mashing the avocado in a small bowl (I use a fork to mash the avocado). Add in the tomato, red onion, cilantro, lime juice, salt and pepper and mix everything together.
Step 4
Heat up the two tortillas over medium heat (approximately 2 minutes per side). I use my griddle but you can also use a pan or a skillet.
Step 5
Now that everything has been heated up, it is time to plate your creation. Spoon half of the guacamole into each tortilla. Add half of the cooked scallops to each tortilla and enjoy your tacos! Serve with the side of grilled veggies or any other side of your choosing. I add the veggies to the actual taco and it is so good!
