Craving sushi? This spicy tuna roll is one of my favorite options for lunch because it is ridiculously easy to make, only takes about 5 minutes to put together, and is super tasty! To save time, I buy frozen cooked rice, which I put in the microwave and have ready within a minute. I hope you enjoy this roll as much as I do!

Ingredients

    • 2 oz canned tuna
    • 1/4 cup low fat cottage cheese
    • siracha sauce, to taste
    • 2 Nori Sheets (roasted seaweed)
    • 1 cup cooked brown rice
    • 1/2 cucumber, sliced into thin long pieces
    • 1/4 avocado, sliced into thin long pieces
    • 1 tbsp low sodium soy sauce
    • 1/2 lime, juiced

Instructions

Beef Bowl
Step 1

In a bowl, add the 2 oz of tuna, 1/4 cup of cottage cheese, and a bit of siracha sauce (approximately 1-2 tsp though this is entirely up to you and how spicy you want the roll). Mix the ingredients.

Step 2

Place the roasted seaweed on a flat cutting board with the shiny side facing down. Spoon half of the cooked rice onto the nori sheet and spread throughout the sheet. Add half of the spicy tuna mix to the middle of the sheet. Top with half of the cucumber and avocado. Hold the filling in place while tightly creating a roll. Repeat with the remaining ingredients to make the second roll.

Step 3

Take a sharp knife and put the blade under running water for a couple of seconds. Cut the rolls using the wet knife. In a small bowl, mix the tbsp of soy sauce with 1/2 of the juice from 1 lime. Dip the roll into the soy sauce mix and enjoy!
