Get ready to enjoy a warm taste of fall in every bite. This is one of my favorite breakfast recipes and one that I consistently make to impress friends and family when I host brunch. Not only is this breakfast incredibly healthy and easy to make, but the mix of flavors will keep everyone coming back for more!
Ingredients
- 4 slices turkey bacon, diced (I recommend brands with no nitrates)
- 1/2 cup sweet potato, diced
- 1 apple, diced
- 1 cup onion, diced
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 3 cups spinach
- 2 eggs
- ground pepper to taste

Instructions
Step 1
In a cooking pan, cook the bacon over medium to high heat until brown and halfway done. Add the sweet potato and add a tablespoon of water to help cook. Stir until the sweet potato is brown and soft (approximately 5 minutes).
Step 2
Add the apple and onion to the pan and stir. Reduce the heat to medium and cover the pan for about 1 minute. Add more water if needed. Add the salt and cinnamon and cook stirring until the mixture is browned and the apple and onion have softened (3-5 minutes). Add the spinach and cook until wilted.
Step 3
Move the hash to a plate. Add a poached egg on top. I use this awesome egg poacher that is a time saver and poaches the eggs in less than a minute! Enjoy!
