This 2 minute pear and ricotta toast is one of the quickest and easiest ways to treat yourself for breakfast. I love the combination of sweet and savory flavors and this warm toast will give you exactly what you need to start your day on a high note!
Ingredients
- 1 English Muffin (I love Ezekiel English Muffins or Thomas Multi-grain Light)
- 90 gr low fat ricotta cheese
- 1/2 pear, sliced
- 2 tbsp sugar free maple syrup (I use Lakanto)
- 10gr walnuts, chopped

Instructions
Step 1
Slice the English Muffin in half and toast the muffin halves. My hack is to stick the english muffin in the microwave for 30 seconds (if frozen) or 10 seconds (if not frozen )and slice in half once it is heated.
Step 2
Divide the ricotta cheese between the two muffin halves and spread with a spoon. Add the sliced pear and drizzle with the maple syrup. Sprinkle with the chopped walnuts and enjoy!
