If you are vegetarian or just trying to eat less meat sometimes, then this Vegetarian Pad Thai is a delicious option! Just as good as take-out, this healthier version has about half of the carbs and none of the added sugar! I recently discovered shirataki noodles and am obsessed with them. They taste just like pasta but only have 10 calories per serving and are filled with fiber. In this case I used a mix of brown rice and shirataki noodles for a lighter take on one of my favorite Pad Thai recipes.
Ingredients
- 1/4 tsp crushed red pepper flakes
- 1 1/3 tbsp salt reduced soy sauce
- 1/2 lime, juiced
- 3 tsp swerve sugar (erythritol or any other natural sweetner)
- 1 tsp hot water
- 1/2 tbsp sesame oil
- 1/4 red onion, sliced
- 1/2 garlic clove, crushed
- 1/4 red bell pepper, sliced
- 2 oz bok choy, chopped
- 1/2 spring onion, sliced
- 2 eggs
- 3 oz shirataki noodles (miracle noodles)
- 1 oz brown rice flat noodles
- 0.4 oz cashews, chopped (can also use peanuts)
- salt to taste
- pepper to taste

Instructions
Step 1
Bring 4-5 quarters of water to a boil. Add the brown rice noodles and boil 5 minutes until tender, stirring occasionally. Drain the noodles.
Step 2
To make the sauce, whisk the red pepper flakes, soy sauce, lime juice, sugar and hot water together in a small bowl.
Step 3
Heat a wok over high heat until hot. Add the oil and swirl it around to coat the sides of the work. Add the onion and garlic and stir-fry for 1 minute, until fragrant. Be sure to stir frequently. Add the red bell pepper, bok choy, and spring onions and stir-fry until tender-crisp for about 2 minutes.
Step 4
Make a well in the center of the vegetables. Add the eggs and stir-fry for 1 minute or until the egg is almost cooked. Add the brown rice, shirataki noodles (lighter noodles in the picture), and sauce and stir-fry for 1 minute.
Step 5
To serve, place the pad thai on a plate and sprinkle with the crushed cashews. Add a bit of salt and pepper and enjoy!
