Prepare to have your mind blown with this healthy pizza. At half the calories of a regular pizza, this protein-packed gem is sure to become your go to option for pizza night. I’ve tried a bunch of healthy pizza options and this one takes the cake (or pie in this case :P). The ingredients are super simple, the taste is fantastic, and it is super easy to make. Spoiler alert, greek yogurt is part of what makes this so healthy. I’ve also found that the crust maintains its consistency and crunchiness. This is a welcome surprise since other bases such as a cauliflower crust tend to break apart and are far more time consuming. Below is the recipe for my Vegetarian Pizza. I know the ingredients might seem odd, but trust me on this one, the combination of flavors is outstanding! Best served for a build your own pizza night with friends and family or date night!
Ingredients
Crust
- 1 cup all purpose or whole wheat flour (plus a bit more for dusting)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup non-fat greek yogurt
- olive oil spray
- optional add ons: garlic powder, onion power, salt
Toppings
- 1 oz red onion, sliced into thin rounds
- 42 grams parmesan cheese
- 25 pistachio nuts, chopped
- 1 teaspoon olive oil

Instructions
Step 1
Preheat the oven at 450℉. Cover a round pizza pan or sheet pan with aluminum foil and spray lightly with oil.
Step 2
In a medium bowl combine the flour, baking powder, salt and mix. Add in the yogurt and use a fork to mix until it is well combined.
Step 3
Lightly dust flour on a flat surface. Remove the dough from the bowl and knead a few times until you form a round ball. Using a rolling pin with a little flour, roll the dough out into a large thin circle (about 3/4 inch thick with a 11 inch diameter). Lay the dough out on the oiled covered pan. Spray the dough lightly with some olive oil and sprinkle with a bit of garlic powder, onion powder, and salt. Flip over and do the same on the other side. Place the dough in the oven for 8 minutes.
Step 4
Remove the crust from the oven and flip over (we are doing this so the crust cooks evenly). Add the cheese followed by the red onion. Sprinkle the pistachio on top and drizzle with the olive oil. Bake for another 6 minutes or until the cheese is bubbly and the crust is cooked through.
Step 5
Remove the pizza from the oven and transfer to a cutting board. Slice the pizza into 8 pieces and enjoy!
